This morning, Sam (not the furry animal thing in Dr. Seuss’ book), told me about his experience having green eggs (minus ham) at the Crumpet Shop at Pike Place Market this market. And my world was shattered to learn that green eggs really are not moldy eggs. A popular breakfast item (I have never seen it on my brunch escapades), green eggs are eggs mixed with pesto. Scrambled eggs mixed with spinach. I always thought that the eggs were moldy and that’s why Sam’s friend never wanted to eat it (at first).
Or perhaps eggs that were dyed green.
But mixed with pesto. I still wouldn’t eat it regardless. Fyi, I like my eggs sunny side up. Slightly runny.
